Les Vins Famille Valery

The Valery family has been producing fine Languedoc wines for three generations. Gilbert Valery bought a wine farm equipped with a cellar in Serignan in 1956, with his children Patricia and Michel joining in 1974.

In 2002, the Valery family bottled part of its production under Domaine des Deux Ruisseaux, a Vin de Pays d’Oc Appellation. 2008 saw the take back of Chateau le Thou, a 20 ha domain.

The Valery Family, rallied round by a very skilled team and craving for innovations as well as a constant search of excellence, has enabled the domain to go towards a qualitative and reasoned evolution of the vineyard. The quality of the wines which is the result of their 20 year efforts, has led them in 2001 to bottle their best “crus”.

CHATEAU LE THOU OR SÉRIE WHITE- Coteaux du Languedoc (France)

Available Vintages: 2016

BLEND/COLOR: 60% Roussanne and 40% Marsanne, Nice yellow color with golden green tints.
PALATE/BOUQUET: Complex with citrus and white flower notes. Great freshness and balance with a lingering finish. Ideal with crustaceans, sambas, cooked fish meals and mature Mediterranean cheese.
VINTAGE NOTES: Night harvest with plot selection and destemming. Soft pressing and fermentation for 25 days.



CHATEAU LE THOU OR SÉRIE ROSÉ- Coteaux du Languedoc (France)

Available Vintages: 2016

BLEND/COLOR: 80% Grenache and 20% Syrah, Very pale pink with beautiful brightness.
PALATE/BOUQUET: Fresh and complex with red berries demonstrating persistent notes. Ideal for happy hour or with a summertime meal of exotic or southern cooking.
VINTAGE NOTES: Night harvest with plot selection. 100% destemming and cooling. Fermentation for 20 days with three pump-overs a day.



DOMAINE DES DEUX RUISSEAUX MERLOT- Vin de Pays d’Oc (France)

Available Vintages: 2015

BLEND/COLOR: 100% Merlot, Deep ruby red.
PALATE/BOUQUET: The entry is supple, sustained by silky tannins. Red berries and spices on the nose. Best served with cooked pork meats, red barbecue meats, stews, jugged hare, and fermented soft cheeses.
VINTAGE NOTES: Night harvest with plot selection. 100% destemming and cooling. Fermentation for 15 days with one pump-over a day.



DOMAINE DES DEUX RUISSEAUX VIOGNIER- Vin de Pays d’Oc (France)

Available Vintages: 2015

BLEND/COLOR: Brilliant delicate yellow robe with green and gray tints..
PALATE/BOUQUET: Complex with iris and violet and dominant acacia notes, with just a hint of pear. Best served with asparagus, artichokes, cheese “souffle”, fresh water fish, crawfish “gratin” or crawfish tails, grilled grambas, american lobster sauce, pan fried scallops, white meats, sushi and sashimi or dry cheeses (such as goat or soft ewe).
VINTAGE NOTES: Inerting with carbon dioxide and cooling before soft pneumatic pressing. Cold settling for 36 hours.
